My guess would be that there's a number of variables as to why sugaring may or may not be being done. 1st of all the process was tradionally done by farmers who viewed it as a cash crop to harvest during a period of the year when there wasn't normally much to do on the farm. Today's modern dairy farmer is busy all year, 24/7. Then there's the matter of start up costs and even finding the labor to go out an install whatever collection method is to be used. I used to help a local farmer when I was a kid. We pulled a small bulk tank around the woods on a tractor drawn sled, into which we dumped buckets of sap, sometimes twice a day. Of course wood had to be cut, usally a year in advance, for the boiling fire and that fire had to be attended multiple times a day. At times I got up @ 4am and walked the quarter mile down the road to the farm to sugar shack to stoke the fire when the farmer couldn't do it. What 14 year old is going to do that today?

I used to work at the Parmelee egg farm on Brigham Rd as a young kid. Early hours and man what a stench! Can't be that way now,child labor laws and other BS like that. Better that when they get old enough the EBT cards are the answer.
