Totopos holds ribbon cutting

Totopos Mexican Grill held its ribbon-cutting, after more than a year of renovations to the former Paper Factory on Route 20 in Pomfret.

“We’re an authentic Mexican restaurant, a little upscale. We started this restaurant about a year ago, it’s been a big battle getting this open,” said Uziel Fuentes, part-owner and chef. “I’m glad everyone’s here, I’m glad we’re in the position we’re in, I’m glad we’re opening soon.”

The ribbon cut attracted local politicians, anxious to welcome a new locally-owned business – and eat free food. Taquitos, Fuentes’ unique “Mexican egg rolls,” salsa, refried beans and guacamole were among the offerings, all delicious.

The decor is flashy, colorful, upbeat. Murals by local artists are on the walls.

The Chautauqua County Chamber of Commerce’s Dan Heitzenrater commented, “The transformation from the Paper Factory is amazing.”

Pomfret Town Supervisor Dan Pacos and Deputy Town Supervisor Ann Eckman congratulated Fuentes on behalf of the town council. Fredonia Mayor Michael Ferguson and Trustees Jon Espersen and Michelle Twichell offered well-wishes from the village.

County Executive PJ Wendel noted that the Fuentes family owns a Mexican restaurant in Lakewood, “and from a south county guy, you can’t beat the one in Lakewood.” He called the time and work put into Totopos “just phenomenal.”

Assemblyman Andrew Goodell and representatives of Congressman Nick Langworthy and State Senator George Borrello also offered support at the ribbon-cutting.
